Vinification
Direct pressing without crushing or destemming, static settling at low temperature followed by vinification in barrels until a dry wine is obtained.
Breeding
In barrels ( 1/3 of new ones) for one year with regular batonnage ( stirring wine lees)
Tasting notes
Colour: A straw yellow robe with shiny green shades
Nose: A strong complex aroma caused by the noble rot (botrytis) with floral ( acacia and hawthorn flowers) and fruity ( exotic fruit, pineapple to start with followed by pear and apricot) aspects
Palate: A very round body completes the harmonious structure with a lot of freshness.It certainly qualifies with a great white wine
