At full maturity. The harvest date depends on the acidity level and the health status of the plots. (Early October on average).
Once in the cellar, the whole harvest is sorted and destemmed to make sure only the ripest grapes go into vats. Maceration will last 5 to 6 days at 22 degrees Celsius
Wine is aged in tanks and bottled very early for the sole purpose of preserving maximum fruit.

Chilled with a creamy fish dish, best at cool room temperature with red meats or poultry.
