Âge

30 years old on average, 70 for older vines

Mode de conduite

Cover planting is used to keep the vines vigorous, Green harvesting regulates  the vine stem yields

Récolte

Picking all ripe fruits from selected plots  (Harvest level ranging from 12 to 13 %vol, Total acidity about 4.5)

Vinification

Maceration for 12 to 24h hours followed by direct pressing without crushing or destemming, Static settling at low temperature followed by thermoregulated vinification until a tender wine is obtained

Dégustation

Colour :  An orangey pink robe with purple shades.

Nose : A very intense aroma with floral aspects but mostly with fresh red fruits : strawberry, raspberry and red currant

Taste : A prominnent taste of all the fruits lasting in the mouth

Accords mets/vins

Ideal for the apéritif but also throughout the meal . In summer, serve chilled
