Hand picking. At full maturity. The harvest date depends on the acidity level and the health status of the plots. (Early October on average). (Harvest level ranging from 12.5 to 15 %vol).
After being hand-picked, the whole harvest is sorted and destemmed to make sure only the ripest grapes go into vats. Maceration will last more than 30 days
The wine ages in new oak barrels for 12 to 18 months, then each barrel is tasted to retain the best wines only.
A dark ruby robe with prominent black fruit aromas and a few spicy and vanilla hints with an ample and fleshy attack on the mouth supported by a strong tannin structure. Keep wine for 2 to 3 years to ensure better harmony.
Serve at 15 – 16 ° with a roast, cheese or game
